In tubes when the fluid is in wavy, or intermittent slug flow conditions and the tube faces occasional dry spots, the sections of tubes which are not continually wetted will see a locally higher metal temperature (vapour doesnt carry heat away as efficiently as liquids) and when liquid hydrocarbon droplets impinge on these sections of the tube at elevated temperatures rapid coking/thermal degradation occurs.
